CRAFTED IN THE KITCHEN

We hand-make our acclaimed dough every day, and cold ferment on-site. We do not have a fryer, nor do we have a freezer. All of our dishes are made by hand, by local employees, and cooked in our Italian made wood-fired oven. We use all kiln-dried oak in our oven that is cut, dried, and delivered by Minnesota Firewood out of Little Falls, MN

FRESH INGREDIENTS

Most of our pizzas are topped with only fresh ingredients…whole ingredients, the way nature intended. We also try to use locally produced ingredients whenever possible, like our smoked chicken from Manea’s Meats in Sauk Rapids, MN…or our custom made italian sausage and State Champion award winning ham from Greg’s Meats in Hampton, MN

A chef is not simply a professional cook, a chef is someone who can visualize the guest take the first bite of a meal they prepared, and can see that look of “OMG” as they savor their first bite. The heart and soul of our restaurant, and has been in the industry as family run business for over 30 years. Hand-makes our acclaimed dough daily, manages food inventories, creates recipes, manages payroll, and ensures our restaurant is ready for service every day.

Creates recipes and manages restaurant operations on weekends. Responsible for beer, liquor, and wine sales and ordering. Loves to stop by every single table to ensure guests become raving fans.
